PREP WORK – with the rest of the cauliflower I used today, 3 large slices for cauly steaks later in the week and the rest, grated, lightly steamed (cauly rice) and packaged to freeze for another meal
MORNING – start with a Bullet proof coffee
12.45 –Slow roasted Lamb leg with 1.2kg =
cooked 820g. Enough for 4 servings, 2
serves our lunch today, 2 serves lamb salad (meal 2) tomorrow! PLUS, steamed cauly and broccolini topped with olive oil and cabbage and leek sautéed in ghee and finished with a little balsamic vinegar
6.10pm - Just wanting something light for
meal2, salad with mixed lettuce, carrot, cucumber, shaved parmesan cheese, walnuts and a dressing of olive oil, apple cider vinegar, fish sauce, coconut aminos
· I promise the meals will get more exciting , but it is New Years Day !. Once I work out how to record my recipes I will post them in print mode.
· coconut Aminos is a substitute I use instead of soy sauce, made from coconuts and absolutely delicious
· I never waste any food so the left over sautéed cabbage and cauly pieces will go into a frittata for tomorrows lunch
· The left over lamb will go into a salad so tomorrow there is very little prep work and cooking!
